The menu for the evening is an inspired example of why Courtright’s is the deserving recipient of a Michelin Star. Roasted wild pheasant and leg roulade with confit cabbage, watermelon radishes, turnips, roasted baby carrots, and pheasant jus will be accompanied by Silver Oak Cabernet Sauvignon, 1999, Napa Valley—and that’s just one course.
Other equally inventive dishes will be served with Calera Mills Pinot Noir, 1996, Mt. Harlan, and Robert Mondavi Reserve Cabernet Sauvignon, 1994, Napa Valley.
