Chocolate Mousse Stuffed Strawberries
1 ounce (2 squares) Ghirardelli Bittersweet Chocolate, chopped
1/2 cup water, divided
2 Tbsp butter
3 egg yolks
2 Tbsp sugar
1-1/4 cups whipping cream, whipped
1 pint fresh strawberries, stems and hulls removed
in a double boiler or in the microwave, melt chocolate, 1/4 cup water, and butter. Cool for 10 minutes. In a small saucepan, whisk egg yolks, sugar, and remaining water. Cook and stir over low heat about 1 to 2 minutes. Remove from the heat and whisk in chocolate mixture. Fold in whipped cream. Take the strawberries and hollow out the insides as much as you can. Then pipe the chocolate mousse into each strawberry.
