Yummy Chicken
Serves 2
Ingredients:
- 2 whole boneless skinless chicken breasts
- ¼ cup flour, plus 2 tablespoons of flour
- Bread crumbs
- 1 egg, beaten
- ½ cup Swiss cheese, shredded
- 1 bay leaf
- ½ teaspoon dried tarragon
- 3 tablespoons olive oil
- 2 tablespoons butter
- 1 can chicken bouillon
Heat oil in heavy skillet. Dredge each chicken piece first in flour, then beaten egg, then bread crumbs. Cook in heated oil until brown on both sides, about 7 minutes. Drain on paper towel. Melt butter in pan. Stir in 2 tablespoons of flour. Add chicken bouillon. Bring to a boil, stirring constantly. Add tarragon and salt and pepper to taste. Lower heat. Simmer 15 minutes. Add cheese and stir to melt. Place chicken in covered casserole. Pour cheese mixture over chicken. Cover and bake at 350 for 30 minutes. Serve over noodles. Enjoy.
