Edamame Hummus & Whole Grain Pitas
2 cups shelled edamame
¼ cup tahini
2 tablespoons water
3 tablespoons lemon juice
1 clove garlic, minced
¾ teaspoon kosher salt
½ teaspoon cumin
2 tablespoons extra virgin olive oil
- Boil the edamame for four minutes in salted water, then drain.
- In a food processor, puree the edamame, tahini, water, lemon juice, garlic, salt, and cumin until smooth. With the motor running, drizzle in the olive oil.
Kid-Friendly Pasta Salad
½ cup cooked pasta
3 ounces each of small mozzarella balls and cherry tomatoes
Toss with 1 teaspoon chopped basil
3 tablespoons pesto or your kids’ favorite Italian dressing
- Pack the pasta, veggies, and the dressing separately. Have your child combine them at lunchtime for fresh pasta salad made just their way.

- A great trail mix includes something sweet along with some whole grains and nuts for protein. Easy to make as well as snack on, have your kids create their own trail mix by sticking to the “recipe” of 2 parts grains, 1 part nuts, and 1 part sweets.
