With the white paper off of the windows, Maevery Public House quietly opened its doors at 20 E. Scranton Avenue in Lake Bluff for a soft weekend opening Friday night, December 12.
Maevery Public House is the longtime dream of first-time restaurateur Greg Derman, known in the community from his tenure as general manager at the Grille on Laurel. Named after his almost 2-year-old daughter, Mae Avery, it is the ideal place to celebrate any of life’s occasions.
Executive Chef, Jasper Michael, helms the kitchen, which features elevated American classics; the menu is chef-inspired, simple and straightforward. From the sausage to the ketchup, everything is made in house at Maevery. Previously, Chef Michael was the chef de cuisine at Frontier in Chicago.
Some dishes to look forward to include: Duck Wings, Smoked Brisket sandwich, shrimp and grits, Skuna Bay salmon, Cornish hen, shepherd’s pie and a bison rib eye. The menu also includes interesting snacks as well as seasonal vegetable plates with chef’s unique twists.
The bar features Maevery’s riffs on classic cocktails, a thoughtful wine list including selections by the glass, bottle and four wines on tap. Several beers are available by the bottle.
The space received a complete makeover courtesy of local design firm Knauer Inc. Drawing inspiration from nineteenth-century London’s private social clubs, the space masculine and eclectic. The restaurant seats 90 and features an intimate private dining room behind the bar with room for six.
Derman wanted to bring a warm and chic place to eat and drink that feels like an intimate dinner party at your best friend’s home. “Everyone who walks through our door should feel right at home and welcome for all occasions,” says Derman.
