HIGHWOOD – It’s been over a year since Ginger’s officially closed, but soon there will be a new pizza place that’s worth getting fired up about. SLYCE Coal Fired Pizza Company from Wauconda is anticipated to open by Thanksgiving at 254 Green Bay Road in Highwood.
Nicole Fry, general manager of SLYCE Coal Fired Pizza Company, explained that after seven years the restaurant decided to open a second location in Highwood. Fry will oversee both locations. Current Chef Mike McElwee will also be joining Fry in Highwood.
“We love the sense of community in Highwood and it reminds us a lot of Wauconda,” said Fry.
What makes coal-fired pizza different from other pizzas?
Fry said coal is the hottest and cleanest burning fossil fuel. “The high temperature allows our pizzas to cook in three to four minutes which results in the perfect balance of char, crunch, and chew that pizza lovers crave,” she added.
Fry described one of SLYCE’s best-sellers, the #13, which has dried figs, gorgonzola cheese, balsamic glaze and prosciutto. Other favorites include the #11 an egg pizza, and the newest addition is #16, which is made with burrata (fresh Italian cheese made from mozzarella and cream) and pistachios.
“There’s no ranch or barbecue here,” said Fry. “Serving very clean tasting high quality ingredients are what we do.”
SLYCE’s pizzas are available in 12 inches, with six slices per pizza. They are all hand tossed, creating a unique thin and bubbly crust, added Fry.
Not in the mood for pizza? SLYCE offers other popular options. For example the coal-fired lemon basil chicken wings are marinated two days before they are finished to “charred perfection” topped with fresh lemon juice and basil. The chicken wings are one of several small plate offerings that serve two.
Fry described how the coal fired turkey and roast beef sandwiches are prepared. The chef will brine and marinate the turkey and beef in house, and then slice them to order. The sandwiches are served on SLYCE’s homemade focaccia bread with a side or chips.
Though there are seven salads to choose from, Fry said the Sicilian Salad is SLYCE’s best-selling salad that is served with homemade sweet mustard basil vinaigrette dressing. “It’s the kind of dressing you want to smother all of your food in,” she added.
The restaurant is currently under construction, and new ovens are expected to arrive the week of October 16.
